Need Advice! Packing for a Cruise to Mexico.

A few years ago, I would have told you that I was a good packer. I'll chalk it up to always being on the move during college. It seemed that I was gone at least two months out of the week either visiting home or friends or doing a school activity. I had ample time to practice. I never forgot anything and I was always fairly organized.
Unfortunately, sometime between the end of college and now, I lost my packing touch. I tried making lists, I tried packing well in advance but inevitably, I always forgot something. Sometimes it was a big thing like proper shoes (yuck), or sometimes it was something I could easily (and maybe more importantly, cheaply) pick up at my destination, like a razor. No matter what I forgot, it was always slightly annoying.
I guess I'm feeling a little bit of packing anxiety now. In a little less than a week, I fly to California with my family for a cruise on the west coast of Mexico. I have a ton to pack and some of that stuff is absolutely necessary. Formal dresses, dinner dresses, summer clothes, appropriate shoes all must come with me. I'm absolutely terrified that I'm going to forget something and since we'll be on a boat, there's a good chance that there would be no way to pick up some of the big ticket items until we land in Mexico, about three days into our cruise! Eek! It's enough to give me a good case of anxiety!
Does anyone have any packing tips for me?

hey! first of all, i just wanted to tell you that i am JUST like you... i always end up forgetting something and leaving something, and since i'm not a big fan of lists (or organization, for that matter), i never realize it until waaay later.
but anyway, i'm so excited to answer this question for you. i always go down to mexico during this time of year (my islander family hates the cold, so we retreat!) and i have taken several cruises (7 day) down there.
first of all, the weather.
during the time of year mexico is PERFECT... not too cold, not too hot... around the mid-60's, light breeze. bring a light jacket for sure, you'll need it if you're by a coastal area (i.e. cabo) and most definitely on the cruise, where it gets pretty cold and windy at night on the sea.
since i like the cruise social scene, i love wearing my best, but casual clothes. i like bringing a couple of my favorite tanks/tees, a pair of shorts and jeans, a summery dress, and a 'club' dress (not too fancy, not too casual), since i like looking good during cruise shows, the bar, or a club. to match up with the outfits, i usually take a pair of flops, sneakers, and heels with me, so i have a show for every occasion (and absolutely DON'T forget your bathing suit! even the cruises have indoor pools, so if it's cold out you can still go out for a swim)
also bring a nice cocktail dress (don't go overly fancy, many people don't) or two, depending on how many formal nights you have (on the 7 day, i had 2)
in terms of accessories:
i like hats. some people are not hat people. but bring one, if you want. i like those slouchy beanies, baseball caps (my inner boy), and sunhats.
i brought a nice necklace and earring for the formal night, and a few accessories for my regular clothes... but not my favorite's i tend to lose them on trips.
